Just survive longer.
Try to have at least 80% damage negation for physical and holy, with 60 VIG you may survive 1 or 2 hits (depending 3 if it is not direct hit) and have leniency to deal with.
If you have enough Faith, Scarlet Aeonia helps a lot.
I used the mimic at the beginning of phase 2 and it helps to make more damage and get more opening to heal, but the fight was barely survival.
If you struggle a lot you may respec you character from scratch, it's annoying to renounce to your play style but it may unlock the problem or at least give you new hope lol
Craft a few Hefty Rot Pots, it has to be Hefty as they apply a better version of Scarlet Rot.
Phase 1 can Rot will only 1 Hefty Rot Pot.
I will assume that you have no issues using Mimic simply to get this fight done. So unequip all your Sorceries except Glintstone Icecrag, Comet and Ranni's Darkmoon. This is so that your Mimic only uses these spells.
Make sure you have Max Cast Speed(Radagon's Icon with 40 Dex). In your Offhand, you'll want to have Shield with Good Holy Negation and if possible with Vow of Indomitable for Attacks you have no confidence in Dodging.

Now, right as you enter the Arena. Dodge the Lunge, Summon your Mimic. Get some Distance, throw a Rot Pot.
Spam Icerag till you get a Frost Proc. After the Frost Proc, keep spamming Comet. With a bit of luck and no spell misses. You should win after several tries.
That's about all I can say if you're going the Pure Sorcery Route(No Int+Faith Sorcery).
EDIT: Remember to use the Magic-Shrouding Cracked Tear and Intelligence-Knot Crystal Tear along Lusat's Staff to get a bit more damage. Alternatively, you can use the New Glovewort Crystal Tear instead of the intelligence-Knot to buff your Mimic Damage but I haven't tried this Tear at all so I don't know how good it will be.
I like your style Sir but throwing Roped Fetid Pot
on his corpse would be more fitting, methinks.
Took me 2 weeks as a spellsword build. His epilepsy inducing phase 2 didn't help.
As sorcerer, I didn't. It's not designed around that playstyle. After wasting time for days I just resorted to jolly cooperation and two random dudes with shield-and-poke and bleed did the work. No regrets.
I'm sorry because I know it's not an useful answer, but you are not alone in that struggle.
