Basically, you need to talk to everyone near the start of the DLC at the two graces.
Don't kill those random scavenger bug things. Talk to them for cookbooks (there are 6) and speak to Moore after talking to a few of them every now and then. one is hurt, throw warming stone near it to heal it. After speaking to them all Moore will have dialogue to pick how his quest wraps up (I suggest checking the wiki because whoever picked these dialogue choices and their impacts is dumb).
Speak to Thiollier and the crippled guy (Igon) near site of Graces (not far from Thiollier actually, roughly some region cliff area) and exhaust dialogue and then check back with them as you progress to make sure you don't mess it up but basically these two lead to dead end quest routes with a special boss. St. Trina & Bayle There is a similar dead end boss route in the Abyssal Woods involving a Madness theme area/boss and no NPCs associated you can do whenever, too, but its route is a little more hidden. These all are basically separate from the main NPC quest/DLC story route (except Thiollier can show up later near the end iirc reading? not 100% as I'm a bit just before the end, myself. The screaming Igon can be summoned for Bayle. If you want to solo just do it when boss nearly dead, or do it earlier if you want to here his popular screaming voice acting...
For the other NPCs... basically as you progress past Renalla to the site of grace beyond her castle you will meet Leda / Anbasch (prob spelled wrong). Talk to them to exhaust their stuff. May have to teleport away/back to get it to progress more.
You can explore areas like Charo's and Cerulean Coast, the river, etc. freely without issue.
The thing you want to be careful of is going too close to Shadowview's gate (basically don't go past the giant furnace golem at the camp, nuff said. The other place to avoid is east of Moorth ruins where you meet Dane is a lower area route from Moorth ruins that leads to a village of pots everywhere. There is a long bridge you can travel across to a site of grace. You can go to that site of grace but do NOT walk past it as that causes the rune to break and advances NPC quests. Only do this when everyone else is done from the main group (Leda, Anbasch, etc.)... Again, not an issue for Thiollier and Igon's quests.
After the rune breaks talk to everyone again to advance their stuff. May take a few visits for Leda until she wants to hunt someone. Honestly, just see her wiki for the details of hunting but note it is worded poorly. She can only hunt one person per playthrough, not both. After rune has broken and you collected 6 cookbooks from scavengers is where Moore's quest ultimately ends (see wiki, again, for specifics).
In Shadowkeep you will do Leda's hunt (fight with her or against her for different rewards). At Messmer you can summon Anbasch (just do it at the end if you want to do it solo) for his quest.
Beyond that the last bit is in the final dungeon but I'm just before that on way to burn the thing so can't comment in detail, yet.
In short, be careful of going too close to shadowkeep past the furnace golem or the site of grace just past pots village bridge area. Avoid those two mistakes before you are ready and you can otherwise mostly freely explore areas you find accessible.
