i'd say samurai with katana into bloodhound fang. And later something like blasphemous blade

Anything once you get the mimic ashes and can do double damage output.
My experience is that usually something that does high damage. Basically the more you have to dodge and actually play the game, the harder it is.
I think heavy weapon, heavy armor is easiest with the least stat investment. Big STR, big END, big VIG. It can get going early, too. Grab a large club 5 minutes into a new character and you are good.

60 vigor, enough endurance for midrolling, a greatshield, and a pokey weapon.

60 vig, 60 arc, White Mask, Vet/Blullgoat for the rest, Bleed Bandit's Curved Sword and Bleed Scavenger's Curved Sword, Lord of Blood's Exultation, Rotten Winged Insignia, Dragon Gratshield Talisman, Claw Talisman and you're good to go for the Clone Army.

or

60vig, focus the rest on str and end, Swordspear, Fingerprint shield, Veridigis armor, Greatshield Talisman, Double turtle talisman, Dragon Greatshield and whatever was the last one.

Just hold your shield up and poke.

bleed arcane, heavyshield poke or mage, regardless the mimic tear will make most of the game a cakewalk, as long as your build is decent atleast

The easiest would be any build with a greatshield and a spear or rapier. It's pretty boring playing like this, so I don't really recommend it. But, you'll have an easy time with bosses. Shields are very strong.

You're better off going with a str build with high end and get the heaviest stuff you can wear without fat rolling... and with style if you're able to do so. Oh, and don't forget about leveling that vigor. If you hit all checkboxes there, enjoy going unga bunga on every boss and enemy. For weapons, Great Stars and Great Mace are great options. You can even get 2 Great Stars if you do Varre's questline and do the "offline invasion". Great Stars has the ability to heal you on each hit, so 2 of them can be very good if you can handle the weight.

As for class, I recommend either Samurai or Vagabond. Both are really good for pure str/dex builds or quality.
STRENGTH is the easy mode. you only need to invest in three stats Vigour, endurance and strength. Pair with any hammer type weapon and shield use guard counters and Lions claw. Every hit will break enemies poise and every second hit is critical hit.
Use great mace it has S scaling in strength.
bloodhound fang with 60 vigor.
ran through the DLC with the new blacksteel greathammer on a faith build, with either flame art or holy infusion lvl 150 dominating base game n DLC, especailly DLC

Samurai for sure.

Here is the first of a 3 part complete build guide to go all the way to Elden Lord.

Note that the author is an experienced player and does not directly guide through the story and required quest lines. So here is a guide to the main story line questing and activities:

I played this build, as specified, all the way to Elden Lord. I did replace my Banished Knight Engval with Banished Knight Oleg and then with Black Knife Tiche. Get Black Knife TIche as soon as you are able. She is the best. :)

Have fun! :)
Good Luck
In short : Level Vigor first, at least 40.

1) 50-60 vigor : survivability lets you get more experience per fight.
2) Any dagger with poison affinity : passive damage
3) Scorpion Stinger : (50 rot buildup) high passive damage
4) Axe talisman + spiked cracked tear : charged attacks are good source of stance damage as well as for heavy damage
5) Dagger talisman : as long as you use charged and jumping heavy attacks - critical hits are common thing
6) Turtle talisman : some bosses will barely give you time to recover
7) Radagon's soreseal : just more stats for melee build, more vigor after all

>Use stagger mechanic: jumping R2 / Charged R2 - is a good way to close distance and break enemy's stance, most of hard foes won't make any trouble anymore.
>Use poison + rot: if you're having bad times with some bosses. passive damage is always good, especialy if boss keeps you at distance most time of a fight.
>Use bow / crossbow / throwables: it is easier to fight them one byone.
>Use every trick in your book if your damage is too low for current location.

Vagabond RL42 only vigor leveled, claymore +5. Made way to divine beast dancing lion, took 3 hours to beat but it was quite the experience. Exploring feels just alright.
Depends on the boss. Bleed builds are the easiest against bleed~able bosses so far. Made stronger with the new root bleed spell/ash of war that I have seen others uses.
