Short and simple - will base the scoring off of subjective 'fun' had in regards to the fight.

S - Dancing Lion / Messmer / Bayle
A - Consort Redahn / Rellana, Twin Moon Knight
B - Midra, Lord of Frenzied Flame / Metyr, Mother of Fingers / Putrescent Knight
C - Commander Gaius / Scadutree Avatar
D - Romina, Saint of the Bud

Love the move sets and balancing of everything in S tier.

Mostly enjoyed the fights in A tier but a bit more frustration involved.

B tier was kind of mid, honestly, but not horrendous.

C tier was 'eh' in the design department, but also in placement and level of challenge.

D tier. Like some of the other bosses, Romina feels extremely out of place in both difficulty and lore. One shot her, reasonably effortlessly. Shame, since she has an excellent design. Many people argue the DLC bosses are 'overtuned'. I would argue this one is severely undertuned.
