Does the noob pay attention to the intro, read the tutorial messages, and is the noob willing to engage with game mechanics and explore? Does he have that mindset to try and try again?

Yes and No.
It's the most accessible FromSoft Title so far, but it still has quite the learning curve and depending on personal skill development can be overwhelming.

Yes, the base mechanics are easily understandable and this time around you can spend a lot of time powering up by exploring the open world before tackling the "main story"

Though this is on a basis that a "noob" is willing to play the game with some neuron activation
It's not a game where you can just walk up to a mob aimlessly and not pay attention

If you use all tools at your disposal, then yes, game is very noob friendly. It's only difficult if you decide to not use certain mechanics, do challenge runs, try specific builds, etc.

I might be too old, but I still wince whenever someone calls themselves a noob.

I would say to a certain part of the main game, but the DLC is not noob friendly. There are bosses in the main game that are considered hard even with Mimic summon.

Noob, new to the game
Everyone is a noob at some point, other just progress faster even without guides.
Calling yourself a noob to excuse to not use at least some critical thinking is just really odd, like how do you even carry yourself like that?

Newb is new to the game.

Noob is the derogatory form, meant for people having a big mouth about their gaming skill but are unwilling to learn or even admit they are not as good as they claim. They tend to have learned one gimmick (say, rivers of blood for the ER theme) that makes them marginally successful and now pretend like that is all they ever need.

A noob will generally blame the game for everything not working out and refuse to accept differing opinions, while the newb is open to the possibility that it might be because they are still new and need to learn more.

That's how I learned it growing up. Which is why I made that comment.

But yeah maybe if it was a derogatory term then the semantics don't even matter

Not necessarily - in my understanding a noob doesn't know anything yet, but he may be willing to engage with the game and learn it. I think the game is noob-friendly, i.e. presenting easy beginner challenges for quite a while (basically all of Limgrave and Weeping), but at the same time it may present itself like a harsh wall if you expect a hand-held ten hour tutorial phase like in Ubisoftesque games.

Everyone has to start somewhere.

Read a beginner guide, level up a bit, either play as samurai and use the uchigatana or get bloodhounds fang and go fight margit with no summons.

If you can beat margit, you will be able to complete the entire game and the dlc. It's more of the same, some easier, some harder. You'll hit smaller roadblocks at a few other bosses, but none will be as large as your first roadblock who is margit, where you pick up your skills.

If you're worried about the dlc, there is solutions to the harder bosses, not as satisfying as perfect dodging their moves, but it will let you complete the game.

If you really want to start at an easier level then try dark souls 3 instead. Everything else is easier other than twins, final bosses of the 2 dlc and the optional boss of the dlc.

If you're willing to use all the help and tools provided by the game, then yes. If you insist on doing everything on your own with just your sword/magic, then no. The key of having a reasonably easy game is adaptability. If you find a boss that is so so so so hard, there must be and always be a different way to do it.
