You could do a 30 dex build until black whetblade and re-spec for occult if you feel like it
But yeah bleed infusion on a weapon with bleed on it isn't that good, since occult boosts both with a good build, and generally the scaling nerf of bleed infusion is not worth it

Typically somewhere in the ballpark of level 80 is good for Radahn, but that's by no means mandatory. You can fight him earlier (he hits hard though), or later depending on your journey. It's true that you need to beat Radahn for the black whetstone.
i know its going to seem weird but im on the team that poise dmg > bleed, bleed is good dont get me wrong but being able to knock the enemies out of their attack imo is much better, i would pick a greatsword over rivers of blood any day of the week, if you still want to go for katanas, moonveil imo is still better than rivers of blood or you can just go with the ol reliable...uchigatana or naginata, if you TRULY wanna go crazy...i can recommend claws, they are CRAZY fast, they will proc your bleeds and you will look cool doing that, i just...dont see how rivers of blood is good when you have so many better options that you can acquire earlier in the game
By go-to build from back in the day was Mohg's trident and a blood infused lance in the other hand. Use Sepu-ku from the lance to buff yourself and only use the running L1 attacks and now you have a pain train!
The running L1 dishes out 6 to 8 hits per attack and will thus bleed people on the first attack often. Typically doing between 2000 to 4000 damage per attack depending on the enemy!
And thats how you do twohanded bleed attacks! Granted I have not tried this build since the game was released 2 years ago and I think they have nerfed sepu-ku since then.
