"Now, for a final toast. (Siegbrau)
To your valour, and my old friend Yhorm.
Long may the sun shine!"
Lothric.
Miquella the kind.
Theollier.
Then there's bird lady from Bloodborne and the Sun Bro from Dark Souls.
I also like saint trina shes a good revelation too bad the boss to get her was a boner destroyer, that great midir area recycle and instead of giving us midir again they give us alien tree sentinel lame
She is human. She has a single life, and yet she braves the entirety of Lordran in the face of almost certain death on a path to find her father and give him her Mother's last words - for she fears that if left alone the Undead Curse will truly take him and turn him hollow and would otherwise be too late.
Not only does she have the strength of body to survive Lordran, the courage to risk her life for her father and for her late Mother... but then also has the strength of will to do what she knows must be done when he finally goes truly hollow (likely after learning of his wife's death, in conjunction with his difficulty with self-appreciation).
Even after all of this, she is kindly and polite.
Sieglinde is single-handedly the greatest NPC in any Fromsoft game.

Lucatiel of Mirrah
She is a mirror of Siegmeyer in many ways.
Lucatiel comes from a low-born family whose only call to 'fame' is that her brother, Aslatiel, was one of the most decorated knights in Mirrah. She was his shadow, and fated almost to merely follow behind him. She was born after him, the younger of the two. She never beat him in battle, and though accomplished in her own right couldn't help but compare herself to him.
Then he disappeared, and she followed after him - to Drangleic. A land of the undead. She comes in search of her brother, whom she fears the Undead Curse has befallen much as it had herself; and in search of powerful souls in the belief that they can stave off the curse and prevent hollowing.
Her actions are futile, and as the curse grows and begins to steal away more and more of Lucatiel's self, she spirals into a state of desperation. Her entire culture was one built upon achievement, and yet even as she pushes through Drangleic and defeats powerful beings to obtain their souls, she cannot stave off the curse. Every achievement is empty; hollow.
Much like Siegmeyer, the self-doubt and perceived futility only serve to deepen the curse until Lucatiel begins to lose everything. Memory of herself, of us, and then even her brother. When we discover Aslatiel in Aldia's Keep, it becomes known that he did lose himself to the Undead Curse and become hollow - and as is ever her fate, Lucatiel follows him soon after.
One of the most tragic NPCs in the Souls games, and still one of the best depictions of the progression of the Undead Curse.
Gerhman, the First Hunter
Need it be explained?
A man willing to sacrifice eternity to save countless hunters from discovering the truth, and suffering the same fate as he.
"Prithee becareful"
