First: For the non-gimmick Golems, Stay close to its feet on the rear side and smack away while mounted. This way the only attack that can harm you are the stomp attacks and you can simply double jump using torrent to evade them. The Lance talisman and Ash blessings are your friend, also farm some rimed rowas from the snowy areas and keep a stash during the fight. The gimmick Golem is a bit of a pain, however, if you read a certain note you find and observe that Golem's boss arena, the answer should be clear.
Second: The Dancing Lion, much like Margit in the base game punishes panic roiling. It also punishes players who get too close in on its flanks. In my opinion, the best way to fight this boss is dodge precisely and move in a way that the player is in front of the Lion's head so that we may punish its head-slam attacks (these have AoE effect in Frost mode), Also, to learn the bosses moves, keep distance and watch the Lion's hindquarters, that pretty much telegraphs all the moves it makes.
Rellana also calls for precision dodging and funnily enough, some back pedalling. She idles for a bit if you actually mange to get away from her and she also idles for a good two seconds after her heavy attacks, so I dodged those attacks while staying close to her and then followed up with an impaling thrust for some good poise damage. While she is entering her second phase, I used my physick with the spiked cracked tear and could bring her down for a critical attack twice in less than 30 seconds, both times with two consecutive impaling thrusts. That pretty ended the fight for me. You can also stay close to her in her second phase to bait out her fire attacks and dodge past her to punish her. All in, I managed to get four critical hits on her in my winning attempt.
Third: The DLC also has NG+ scaling and in my humble opinion, experiencing the DLC for the first time with NG+3 scaling is not the wisest course of action.
Fourth: I agree with the performance issues, i sincerely hope they put a patch out to fix it.
To conclude, The DLC is hard as ♥♥♥♥ but in no way is it unfair or unlearnable. I'm sure there are plenty of other strategies that people will be more than willing to share. Also, I'm sorry to tell you that I found at least two more bosses who make Rellana look like a walk in the park.
But this difficulty spike is kind of the logical result of what FromSoft has been doing over the past 11-12 years. They have been consistently upping the ante with their boss fights over the years and there are only so many ways one can make a boss fight difficult. I'm also sure they would have faced a similar or worse backlash from their long time fans if the difficulty did not spike in the DLC.

Im watching non binary Sailor Moon, i mean Messmer, Do Radagons jump spear attack right into Malenias Waterfoul to pop up into the God Sklin Noble rapier flurry into godricks Axe plunge .. one after the other ... absolutely stupid. Flying across the screen like birds.
The animation is literally shooting the boss as an ash of war ... you know the spiral air attack the giants do ... paste the bosses onto that attack ... that's their closer ... its just such a failure.

The last boss victory strategy sums up the DLC ... look for it if you want to ruin your game.
