Margit doesn't drop a remembrance. His alter-ego does, but not until Leyndell much later on. All Margit does is gatekeep you out of entering Stormwind before you're ready. In truth, you never need to enter Stormwind castle at all.
Upgrade weapon if you can.
Use poison if possible, like Fetid Pot (will poison you as well) or Poison Mist incantation.
He should have one
Margit is probably my favorite boss in the game simply because as he serves as a wake up call and a bit of a tutorial to how Elden Ring works, and he does it perfectly. He's basically there to let you know that you either get good enough to beat him as you are or you go explore and come back after you're all leveled and geared up so you're more of an even matchl.
And you can skip needing the two halves of the medallion to get to Capital region via a cave to the very northwest at ground water level.
They have 'alternate' routes throughout this game from the start, the question is whether you can survive these routes underleveled and undergeared.
EDIT: Looking at the OP's post history, seems like the person is just that bad at games in general?
Always roll into him, if possible into his back, that way he wouldn't punish you with his glowing dagger. Rolling away means you're in perfect range for his next hit, so roll into him.
If you need to heal, you need to either be very far away or next to him, if not he'll punish.
Level your vigour over everything else.
Go explore the rest of the map before him too. There are a lot of bosses. If you did them all, you should be able to flatten him.
If all else fails find and use bloodhound fang
This isn't Dark Souls where you are largely stuck on one or two paths to progress. It's an open map, something I don't enjoy much, but it does allow you to **** off and roam around to get a bit more practiced and equipped and come back later.
Also at the start of the game focus on getting your vigor stat up. Bare minimum 25 or up to 30 and consider upping that as you continue to progress. Elden Ring is a looooong game and it accounts for the idea you'll have more levels than most souls games before it.
The items held by the Stone Gargoyles will help you

He is stronger than main boss of the castle you're in, so he's kind of a wall.
