I wouldn't consider Margit the first boss. He's meant to be a wall you come back too after you do more of the map. Have you tried exploring south for example?

hey, me too, and i thought i was good, at the time. don't sweat it

you can go level across all of Limgrave and come back and if you want a hint, there is a cheese pet that will destroy him google Rotten Stray. you can run to this thing in an advanced area, and get it without dying pretty easily, but it kind of breaks the castle bosses

as others have said he is very much a reality check and can be quite tough, if you aren't ready for him, the others basically gave the perfect advice, take more time to explore, maybe you'll find something you click with, and you can find something specifically designed for the boss in question.

That aside. Just be more patient about attacking if you are solo'ing without summons or coop buddies. Just observe all the attacks he does and see what leaves openings.

One of the biggest benefits of Elden Ring's open world is the ability to just ♥♥♥♥ off in another direction and explore. You have a lot more options for gaining xp and getting stronger (two different things. stats help, but gear helps too.).
So for new players to these sorts of games, you have a lot of leeway to get better and learn.

It's literally first boss you are likely to encounter that has a cutscene, therefore it's "main".

Margit uses a lot of delayed attacks to then bonk you on the head. Not counting DLC Bosses, only Malenia Blade of Miquella is more sophisticated in attack patterns. Making Margit a actual Gate Keeper.

Try to visit all the churcges to upgrade your flasks, it helps a lot. You can usually find churches by spotting their outlines on maps.
