just do the build you want to do and stat dump in mind if you dont want to be "too strong"
I finished the dlc with lvl 160; 60 vig; 45 END, 49 STR and the other stats based on my weapons of choice. Mostly Arcane and faith for a few spells and bleed / faith weapons.
Don't rely too much on armor and other unnecessary stats, which barely improve something. Try out different weapons, shields and skills you feel comfy with, and most importantly have fun!
But hey, do whatever you want with your build. It's yours to experiment with.

And here's a graph of the point spread. Notice the dip just before 60 versus the flat box after. It's even worse for spells because they're backloaded and get their MOST gains from 60-80.
