Second off, jump is your friend. It can avoid most of his attacks easier and for longer than dodging can.
Third off, he locks himself into long animations for a lot of his attacks, so if you can sidestep one you can punish it immediately and he'll just keep attacking the air you used to be standing at.
This attack is easy to avoid by going backwards
and dodge backwards when he gets near, attempts to grab.
Ranged attacks are useful against him. For example Pulley Crossbow or ranged AoWs.
