3: the old horned lady in the castle will have some dialogue and give you an item. Other than that nothing that I found ...yet
You can head back to St. Trina. The old Hornsent hag might have new dialogue depending on if you've spoken with her recently or not. Perhaps Ymir's questline is still available if you haven't finished it yet. A couple of the NPCs died in my playthrough so I'm not sure if it'd be any different from you.
But besides that... it's kind of an eerie feeling, looking at the map you spent hours piecing together and exploring, only now realizing that the Land of Shadow is quiet. There's no more ambition, just the same lonely purgatory only felt in Dark Souls 1 with the dispelled illusion of Anor Londo. Seems like that's the message here; there's nothing left. There's your ending, I guess.
