I´m not sure how to use this information.
I´m struggling at the start of the game as it looks like I can´t get a paladin build working.
This "endgame" stuff surely is nice but how does it help me to get a paladin running?
Or is a paladin just a nice respec option once you´ve beaten the game with a different build?
I´d like to play a naturally growing build while playing the game, if you know what I mean.

How i have played faith builds....
Pure faith .... if you are up for it.
Get the claws that require just faith ...
From Roundtable hold. ...
I run to graveyards grab the , rune orbs , start with a lands between rune ...
level to 25 very fast while fighting nothing ....
THen use the claws until the capital where i grab the coded sword....
They cannot be blocked by shields.... scale off faith ... have no weight ....
but.... not a first timer route...

Ah, I overshot your problem. I'll give you the gist of what is going on.
The issue you are currently encountering is the split scaling Blues.
All enemies, players & you, have what is called hard defence. As in damage is reduce by a set amount. This hard defence happens to every individual affinity, so spells that do low DMG and weapons that do more then one Affinity get their damage reduce by more then expected.
This is a issue felt the hardest at the start. HOWEVER, this quickly goes away by leveling the relevant stats & getting better upgrades.
If you have not explored much beyond Limgrave or Defeated Margot (who is much much harder then most of the Bosses in the game) You won't have unlock The Roundtable Hold to get the upgrades above +3 or Buy a Mace. If you travel North or West, you will unlock the Hold after resting at a site of Grace.
If you go South, following the Road, you will find a Large Broken Down Wagon that holds a Morning Star. The Southern Peninsula is the Next Tier in Difficulty beyond Limgrave. Whit the Castle Fallowing suit, then Liurna & Caelid.
The Mace & Morning Star have slightly lower scaling then a Sword, but the base DMG is higher, making them easier to "Get Through the Split scaling Blues".

I'm also running melee FTH build rn, my stats distribution is similar to yours, and it hit like truck.
I dual wield Lordsworn Straight Sword both imbued with Sacred Blade (Sacred affinity), with Sacred Scorpion Charm and Two Fingers Heirloom talisman (all can be obtained easily), this set up carry me all the way to Leyndell, until I replace the right hand with the Lightsaber (Coded Sword).
Sometimes I need to swap to Flame Art though, some enemies like Radahn have really high holy damage resistance.
I hope this will carry me till on long enougth.

but i like faith builds .. and just wanted to share that they can destroy certain opponents that typically cause problems for all other builds ... like these guys ...
Im enjoying this variation .. its INT and FAI 50 faith 40 int .. im lvl 100 this is a first playthrough .. faith is great .. really!
