There wasn't anything for me though.
I just lost two characters and 170h of progress, it was my own fault though.
After seeing that to achieve all endings on one NG you would need to make backup saves and restore them manually after each ending I went ahead and did exactly that. Except...for the last ending, I accidentally moved my backup into my save folder, rather than copying it. I deleted the save by impulse after I was done thinking I'd have the backup ready and well...it was too late to realize I'd moved my backup rather than copied it by that point. I couldn't retrieve anything with right-click undo at that point and nothing was kept in the recycle bin as it was full.
I guess I live up to my name at least...
edit: Okay, so there are cloud saves it's just potentially unreliable due to a bug.

I'm guessing that might be what happened to me? After checking the link I posted previously there was nothing for Elden Ring, and when checking the games properties (cloud save was enabled) it lists "0MB stored of 38.15MB available".
I haven't actually launched the game or closed steam after my saves mishap, so I was thinking steam shouldn't have overwritten my cloud save with nothing (I certainly haven't had a prompt). If it can overwrite a cloud save with simply nothing unprompted then it's pretty redundant.
it can overwrite or delete any cloud save if you got connected to a backup server because the server rule is the newest state is to use, after starting one time this is the actual state, i would say your save file is gone.
since this cloud save bug is known we always tell ppl to deactivate cloud save and make manual backups because it also can revert your save file to a older one and this can cause a ban if you have no actual manual backup to prevent it (happens to me and others as well, there is a one time warning that something is wrong with the save file and without restore the actual save file it cause a ban within 24h, i was lucky i had only started the game at a new rig so i was able to copy the correct file from the old rig).
