It's the Shadow Tree.
scædu gets rewritten as sceadu in modern English but the original word has a letter resembling an A. It's the closest word to both the description and the intent.
Its pronunciation is basically the same as shadow.

To be serious though. It's a piece of the anti-erdtree. The erdtree is a golden shining tree. The anti-erdtree is dark and looks to be vailed in shadows. So, it stands to reason it's a shadow tree right?
A lot of words in Elden Ring is at least inspired by celtic/old-english and is therefore prounounced in a non-intuitive way to it's spelling. "Scadu", could be pronounced "Shadow" or at the very least be an old-english word for something like shadow or dark.
Scædu-fcex is literally ‘having shadow-grey mane (and coat)’
It's Shadowfax when anglicized.
