They had to implement a feature like this to accommodate for the most players as level in the dlc has less impact... and on another note, why aren't you using the blessing? if you are running 80 vigor and bull armour then you're either getting close to max level and are running out of things to level, or you need all the help you can get...

I recommend not sitting on boss you can't beat just mark it on your map and leave it for later, if you struggle and keep exploring the map, eventually you will level the blessings to the point, where the boss will be much easier and you can beat him without crazy struggle. I just reached hippo boss and beat him fairly easily due to that. where i've no doubt he would 1-shot me without those blessings.
I get one shot too and I'm on NG+6 or +7 scale, so it's kinda hell, but finally its worth it. Easy boss fight is boring.
Dude somehow decided to play a game based hugely on exploration, without doing exploration.
I'm not sure why people are still expecting to play Elden Ring as if it was Dark Souls when it's been made clear that it isn't, and the DLC is the epithome of that design.
