ok this boss is pure bs all of his attacks can go throw walls and randomly get double hit boxes on any attack it does

I finally was able to best this guy by using a 100% block shield leveled to +23 to get the most Guard Block for it. Using the Greatshield Talisman, enter arena. Hold up shield to survive charge attack. Create enough of an opening to summon Mimic Tear. Equip Shabriri's Woe to attract most of the agro from Gaius, so that Mimic can damage him without dying to him. Use the Antspur Rapier with a poison infusion and just hold your shield up and spam the light attack. You'll get guard broken quite a lot by this guy with this method, but as long as you have your shield up again before the next strike hits you, you'll be fine. Sometimes his charge attack is bugged and will damage you no matter if you had your shield up or not, so be prepared to quickly heal after you take that hit.

Equip some freezing pots and swarm pots to have your Mimic use an endless supply of them to get extra damage from freezing or bleeding Gaius, if you're lucky enough that your Mimic uses them often. But even if he doesn't, the poison and scarlet rot will end things quickly.

It took me a few tries with this method, but every single on of them was close. As long as you don't get unlucky to be guard broken in the beginning of his long combo while his charging gravitiy pull spell is also active., you'll be fine.
