They have that thing where if you roll "too early" they can speed up the animation, and if you roll "too late" they can delay the animation.
It's not hard to not see that. Test it for yourself.
I know Elden Ring have massive input reading problem but this DLC took it and crank it to 11
If you're facing a boss that can input read (which, down to brass tacks, is actually them responding to seeing a flagged item like the estus appear in the arena; not that it really feels any different than input reading), dance with him until you have an opening to attack, and use that opening to heal instead.
Getting roll caught by delayed attacks is fixed by practice practice and more practice
Take Mesmer for example. I dont know if he is a secret boss or a end boss, i dont even care, but that dude doesnt stop attacking, and even if you run across the arena he have that gap closer with one dash witch if you get hit you loose around 30-50% of HP witch is ridiculous for a "flask punish", dont you think ?
