Killing certain NPC's for their gear, will i miss something later on ?

I've heard that for the most part any NPC can drop their gear and armor (if those drops are available) that's the reason why I keep seeing those bloodpools around NPC/sellers etc.
I myself killed the samurai guy for this katana (once i knew he could just drop instead of doing the quest). Now by killing those NPC that offer quests and even sell some stuff, will I miss a lost of stuff later on ?

you will miss them on boss fights, especially the final boss.

there is a certain point in the story where all npc quests void so after that you can kill them.
