HIs slow two hit swipe-stab combo is easy to adjust to when you try to focus on the lack of flame effects instead of the speed, that was how I learned to recognize it easily.
the super fast 2 hit slash n dash combo was weird and I honestly don't have an answer for it other than pray you get the first dodge in quick enough to be able to avoid the followup.
His 4-5 hit fire combos all have unique variations but similar and consistent timing. Once you learn you only ever need to time your dodges for the finisher which will usually be either a fast swipe, slow swipe, uppercut -> slam or a slow thrust depending on the combo he did makes it a lot more manageable.
Sonic spear spin is weird but I found dodging forward then backwards when he got close allowed you to dodge the follow-up and the upper-cut -> slam pretty consistently
Air wombo combo is intimidating at first but not that bad to dodge, took a good number of attempts to figure it out though. I dodge the first slash going away from where he's going to end up afterwards and immediately start sprinting, and jumping or dodging for that last bit of momentum to avoid the barrage and be in position to dodge the spear AOE after.
Phase 2 is actually a lot easier because the snakes are kind of slow and easy to react to and provide clean punishes every time, and his little drill move is easy enough to react to as well.
The trickiest sequence to dodge was probably the flame arc into flame stabs into jump slam into spears from the sky, you need to dodge the jump slam at the appropriate time or you get hit by the spears before you can roll again, it takes a few times to get used to it. Other than that, the weird delay in the super thrust is the worst offender but after a few attempts you also start seeing it coming.
The second phase is kinda daunting until you realize how vulnerable the snake is, you can almost always get a hit in when it ends its sequence. I think I hit the snake more than Messmer himself in the second phase.
All in all, after beating him I gotta say I'm a bit baffled by all these criticisms about the DLC being too hard, because I found Messmer not nearly as hard as Malenia. He's maybe slightly above Mohg/Maliketh tier for me. I can only assume that the other bosses must be much more insane than him for the criticisms to be warranted.
I Just used some gard counters or charged attacks with the large club and this ♥♥♥♥♥♥ was stunned very often
I hate to play this way, it's 0% fun but at some point I had better stuff to do than struggling with stupid game design ideas
just dodge them and punish them, he will go down faster that way
also use the opaline hardtear in your special flask, it lasts 3 minutes and gives good extra defense
At first I wanted to star-fist poison-pummel him to death (with Poison Flower Blooms Twice), but I noticed that, not only he zooms around the entire arena, but when he goes snakey-snakey, he does have a tendency to slightly move away when he reappears.
After that I used Milady and it was simpler.
As for the defensive side, I just died until I knew how to avoid everything. Except the double slash he does, with the second slash making him dash away. It's like Radahn's, if you dodge the first attack, you're bound to eat the second one and that's not great design.
His big combo, with multiple lances on the ground at the end, is honestly easy to dodge once you're not spooked by it. Dodge first slash normally, wait for him to turn back towards you, then you can actually dodge all three stabs at once into him. Then you dodge the slam, then the lances right after and it's punish time.
"Secret" to kill anything in this DLC is to be in the appropriate scadutree level. Everything else does not matter.
I think I only used the AoW once in the entire fight, mostly just poked 'em with the big 'ol dinner fork until he died (and it was fun as hell)
