However, I'm having fun even with all the difficulty I'm experiencing. I enjoy this sort of challenge.
This is definitely not for everyone, and it's okay if you ended up not liking it.
I just don't understand why they would take the Elden Ring formula which made them millions of dollars, and then completely throw it in the dumpster for a "Challenge"
It typically does not mean anything, but in the case of Elden Ring, it provided enjoyment to more people outside of the Dark Souls series. It was the most accepted of the franchises, because more people had fun playing it. Why not use the formula of Game Design that made your game successful? It's just crazy how different the DLC is from the base game, completely unfun and boring.

Not so straightforward, in the base game I loved exploring and finding new and rare gear. In order to do that I had to kill all the bosses off, not because I particularly enjoyed doing it. The DLC is no different. I just have to decide if it’s worth it.
This is exactly how I feel. It's almost like they knew people blew through their game with the broken rivers of blood builds and instead of balancing the game they just accommodated the DLC to fit the most niche player bases.
Personally I do like exploring every corner and I like the different flair of the areas. They do seem rather empty though compared to the main game. I agree with you about the bosses though, way too overtuned.
Games would be really ♥♥♥♥♥♥♥ boring if we all thought the same and enjoyed the same things, right?
