There's no scaling other than the obligatory penalty for using summons, enemies are just disproportionately strong to force you into hunting scadutree blessings.
Eh I'd say two or three is enough for the start.

Edit: Rellana has 32k health on NG+ so a perfect run would be 170 attacks if buffs were upkept the entire time so i attacked her roughly 270 times give or take.
yes the blessings are technically optional, but you don't account that not every single player is some god at playing the game. the enemies and bosses deal an extreme amount of damage even by the standards of soulsborne titles and are very tanky. even bandai themselves stressed on using blessings to even things out.
