Stance breaking is a core mechanic of Elden Ring.
TLDR; get a primary weapon to aid you in your journeys, like a shortsword or a katana, imbue it with magic, try to constantly break the boss posture with heavy charged attacks or just dpsing it, when the boss falls, go to its face and crit him.

I don't think I ever bothered to fight these.
There's a gimmick that comes up later that works for some of them.
You are either severely under-leveled or you have not been getting enough blessings.
You attack the legs (preferably on a horse since you need to jump over the fire when they stomp or jump) to stagger them, after 3 times they will fall to the ground.
They have a "face" that will be open for a big crit when they are down.
Usually you can defeat them by doing a crit twice.
The ones appearing in later areas often have a place with higher elevation from where you can throw bombs into the basket/furnace thing for massive damage, killing them with just a few.
The reward for those are new tears for your physics flask.
