There's a crystal tear available in one of the churches in Altus Plateau that lets you ignore Mohg's unavoidable damage countdown attack. (part of Yura's questline)
Mohg is weak to all status ailments so picking up the Pulley Crossbow at the demihuman settlement in Mt Gelmir and then stocking up on frostbone bolts and bleedbone bolts lets you do some serious indirect damage, especially useful in phase 2 where getting near him is very unpleasant.
Even a non-bleed build using a weapon with innate bleed build-up will be proving quite useful.
During the Phase 2 transition, he will stand still. If you have the drank your Physick with the Purifying Crystal Tear, you can stand behind him to his left side and unleash hell. Damage done mostly depends on whether you can proc blood loss or not, but any bit helps, especially since he recovers health during his transition.
If Mohg is still in phase 1, you can also use Mohgs' Shackle twice. You can find it at the bottom of the Subterranean Shunning Grounds, in the section with the Giant Lobsters.
If you time it right, you can even use it right before he attempts to phase transition, buying you a lot of extra time to deliver the pain.
Phase 2 is a game of patience. Be careful not to walk into the bloodflame puddles, and wait for an opening. He has a lot of follow-ups now, but he will eventually leave gaps to sneak a few hits into, the amount depending on your weapon of choice. This is easier if you manage to poison and/or scarlet rot him by any means.
This is the basics. I can elaborate further, with more in-depth information on what other builds can use to beat Mohg more easily, if so desired.
I forgot to mention I'm a White Phantom I think. But he still sucks. He makes the arena actually impossible to exist in whenever I've fought him. Probably shit RNG or he spams but it's like every other attack covers the area under, around, above and on top of me in fucking bloodflame.
You kinda can't find a good playstyle against him as you can end up just blocked by chip damage
