Either the boss is too big for its tiny arena and so your camera is inside their body and your guessing what moves they are doing for the most part (Dancing lion/Hippo). Or the boss just isn't fun to fight and tries too hard to be the next malenia but without being able to get staggered on hit which made the malenia fight fair and enjoyable this just feels cheap and unfun (Rellana).
DS3 is the best example of challenging but fun boss designs look at Champion Gundyr that's such a great example of aggressive but fair and fun to fight.
