I just beat Rennala with my dex build. I’m at about level 43. What demigod/shardbearer should I go for next?

Radahn probably, but to trigger the castle to festival mode, to fight him you need to get to Altus. Two ways there the Dectus lift if you found the 2 medallion pieces, or go thru the cave system.

*you get reward from gideon after beating it if you havent get rune of death.

North Altus, but if you find and talk to Rya and get her necklace back She will be waiting for you at the top of the Dectus lift and will teleport you there

where’s the manor?

The Carian Manor is at the northernmost part of west liurnia, after the Kingsrealm ruins. It's pretty relevant if you want to unlock one of the endings.
