We have very little detail on how their builds were... 60 vigor means nothing if they were using scorpion charms, no shield, shabriri,... Not saying it is going to be a cake walk though.
To the author, I respec'd to a more balance approach, probably similar to what you wish to do. Leaving out all the bar related stats, as it highly depends on your playstyle and armor, but keeping it balanced to be able to use most things in a kind of "paladin/crusader/knight" settings, I went with 30 Str 56 Dex 41 Fth (frenzied seal), base Int/Arc.
People really need to check their resistances. The Dragonshield Crest Talisman is a main stay for me.
I'd say go with 60 health and put 40 points in endurance so you can use shield and heavy to medium armour. Most enemies in DLC are doing new game +3 damage, so you will need that endurance to not only dodge but attack as well.
For me, i am going with faith- dex build with bolt of Gransax. Weapon art allows you to take out enemies from a distance and with guard counters you can easily break poise in one to two hits.
Other than that go with whatever weapon you are using and most familiar with for your first play-through so you can have fun and not blame the devs that dlc too hard can't enjoy.
Step 1: Figure out which weapon you want to build for.
Step 2: Reset your stats. While here, where you can re assign your stat points, keep adding the stats so you see the damage increases by 2-3 points per 1 stat. Once it starts to increase by only 1 damage per 1 stat that's when you hit the "soft cap". Keep doing with the rest of your stats until you're satisfied.
