This you can do. Manual saves are easy to do.
Not possible and also not allowed.
This! It is indeed possible, to extract a character from one save file and inject it into another save files character slot. But if you don't know what you are doing, you have a high risk of catching a ban. So, I advise against it and won't provide details to how it is done. Even though I did it myself and never had any problems.
So it is manual backup of your save file for you and reverting to what you want to play.
You can't actually have them in different save slots unless you had saves from every character you have played, which I do, so in theory I could do that.
Another tool able to do that is Elden Ring Save Manager on Nexusmods, it's a bit unwieldy UI-wise but for those two things (along with a few other features) it works fine.
