54 Vigor is the minimum needed to rock 2000 HP with Erdtree's Favor +2 and Crimson Amber +2.
Focus on an armor set, with your preferred poise break point, and the heaviest weapon you plan on using to see what your max endurance should be.
Build should not be centered around one weapon specifically, but around a playstyle that can be used with a variety of weapons. Example being Roar AoW's and charged attacks with an offhand highland axe and finding which weapons you personally enjoy to use them on. Generic builds often focus on damage stats purely, which isn't bad or anything...just less unique.
Lastly you should set a level limit and understand what the intention of the build your going for is. If it's for invasions, most frequent would be around RL50-70. Co-oping is similar, but late game fights like Mohg, Malenia, and Radabeast often are in the 100-150 range. If it's for arena duels, RL138 allows you to match 125-150 level players. Just understand you can never level down, so make sure to stay within certain level ranges if you want to do specific things.
As an example in PvP, I wanted to use the Marias Executioner Sword to out-trade opponents who would think they could out-poise/trade a greatsword. So, I planned my stats for RL138, had a lineup of talismans to wear to maximize damage on "the drill", and an armor set that I could wear with enough poise to guarantee my attacks wouldn't be interrupted aqainst specific weapons. Was it PvE viable as well? Of course! The Drill AoW being buffed by the Rotten Winged Sword Insignia, Crucible Sword, Shard of Alexander, Millicent's Prosthesis, Magic Cracked Tear, and the Thorny Cracked Tear was insane. However, my stat spread and talisman setup has basically turned my "Drill One Trick" build into a STR/ARC multi-hit status build at the same time. On that character I was able to beat all remembrances in like...seven hours casually, only taking an hour and a half of arena dueling after to hit max rank.
