Bleed build advise
Currently SL 121
Vigor 58, Mind 16, Endurance 32, Strength 17, Dexterity 28, Intelligence 10, Faith 8, Arcane 51 | Using Eleonora's Poleblade, Talismans are Blessed Dew, Green Turtle, Lord of Blood's Exaltation, Radagon's Soreseal.

Flask has HP regen + replenish 50% HP.

I don't use any spells or buffs. What are some spells / buffs / improvements you'd recommend?

Bloodflame Blade can stand-in for bleed or enhance a standard weapon that has implicit bleed. A great/necessary incant if you switch off of the Poleblade to something else.

Arcane isn't super necessary to have effective bleed on your build, so you're kinda stuck with only two or so weapons that can scale effectively with your stats - and certainly not enough Faith or Int to cast useful/helpful buffs and especially nothing offensive.

If you put some more time into leveling and aim to get enough Faith to cast Golden Vow, you'll also be able to cast most anything else with the Dragon Communion seal to good effect. You could even aim for a softcap if you respec.

tl;dr Decide on potential replacements for the poleblade, or double-down on using it and aim for 99 Arcane/60 Dex. You'd be overleveled, but such is the nature of certain weapons and builds

tip: incorporate Swarm of Flies into your build, in either case.

Blessed Dew is honestly really underwhelming by the time you hit RL50. I'd recommend switching that out, and probably the Soreseal as well, it's probably not the most helpful talisman you could have. You could try the Winged Sword or one of its upgrades instead, or Alexander's Shard if you want to lean into your WA. Or you could leave a free slot for defensive talismans depending on what you're fighting.

Your stats look reasonable for that level, but there isn't really room for casting buffs, you'd have to use consumables. Exalted Flesh is always good, the Pickled Turtle Neck, or one of the aromatics.

You can get it in early Liurna and replace (and even stack) it later with the most powerful versions. Considering Eleonora have a insane attack speed (specially the ash of war) this is one of the best talismans hands down.

Now you want more faith to cast

Remember the poleblade also does fire damage so you are going to notice the damage increase A LOT.

I'm curious if one can get similar performance from a Fire/Flame Art Uchigatana/Nagakiba with lower stats.

With OPs stats, Occult is also starting to look like a possibly good option - I must test more stuff, as the Souls games are leaking into my memory of how it all meshes in ER

The weapon/upgrade/scaling balancing is so intricate, that I wind up spending more time messing around with stats/ashes of war than actually progressing. Threads like this just give me an itch to do it some more lol
