Essentially yes this is true; the game is well made and has a lot of content to thoroughly enjoy, but playing it for a few hours - I can tell it feels essentially like they took the Dark Souls gameplay/formula and further built upon it rather than making an entirely new product, if you catch my drift.
Its great if you like Dark Souls (or have never played one and want to try it out) but if you didn't enjoy the last few iterations then I wouldn't recommend diving into this one. I'm sorry! GLHF either way though!
You can also summon (and level) spirits that help you fight bosses.
PvP is completely optional, only NPCs will invade you (rarely).
Dodging - well, that you must learn *shrug*

one thing is that if you get stuck at boss fight or area you can simply ignore it and just go around leveling up and discovering more of the world which gives you much more freedom than dark souls and bloodborne
my first souls game is DS2 and it's regarded as the worst but I loved the game , I think it's worse than DS3 from gameplay experience hit boxes and areas are not of the quality like DS3 or bloodborne
I think the Elden ring world and story is much more easier to get into it
I think Elden Ring is an experience that shouldn't be missed by any player
Elden Ring is a natural evolution of the Dark Souls formula. If you are frustrated by constant deaths, losing stuff, needing to overcome harsh challenges - etc - Elden Ring isn't the game for you and you will be better off playing something else instead.
Of course, Elden Ring also has more ways to get around the difficulty and such if you really want to. But is that really what you want - to play a game only by looking up some broken online builds or the like to cruise you through it? The game is meant to be a challenge and most of the elements of the game are best enjoyed through that lens.
All in all though, if you didn't enjoy Dark Souls it's very unlikely you'll enjoy this. Of course this game has more content and is much more polished due to coming out a full decade after Dark Souls, but the core identity hasn't changed.
