There's some sort of correlation in the Souls games between characters acquiring power and growing in size, you can see it with characters like Hoarah Loux, Rennala and Gael, that are supposedly human but are freaking gigantic. You can also see that Morgott shrinks down significantly once you beat him and absorb his runes. Gael in DS3 is a prime example, he quintuples in size after acquiring the Dark Soul.

Radahn who was believed to be the "mightiest of the demigods" is like 8 times the size of Ranni's real body, and they're brother and sister. We also know for certain that he grew in size from the descriptions, and because his horse stayed the same size and is now tiny compared to him.

Then again, you have exceptions like Malenia, Radagon and obviously the player character, so it's somewhat iffy. It could be something like innate power vs. acquired power but even then it doesn't take the tarnished/champion of ash/chosen undead into account.

I think it's mostly done just to make the game fair and give these bosses clear visibility in fights. These combos would be much harder to see and learn if they were player-sized

I mean, if we see it purely from a gameplay standpont maybe, but ehhh. you know?

The main problem with bosses like Radahn, Makar, Fire Giant and such in Melee is that they're straight up too big to properly read their combos. Meanwhile I've never had a problem reading what Malenia or Friede were doing.

malenia and friede are still really tall but yeah I agree the camera is very bad when you're close to bosses that are huge

Well, you are both correct. The perspective of the game requires enemies to be larger to give them good visibility. Note how even supposedly small enemies are actually quite tall or as tall as the player model. And also there is the size equals power thing. Interestingly, the humanoid enemies that are larger than the player in game may have the same normal human size in reality. But the character perceived them as imposing and dangerous. Example: Look at Godrick's head after you killed him.
