Last year I had consistent 60fps on max(without ray tracing) but now I have random 10 fps drops and it goes back to normal no matter what resolution or setting I put it on
If you stay offline with that character all will be fine. Never go online with the same character.

Elden Ring checks your save data for tampering when you log in at game start, either automatically or manually. It looks for things like items that are unobtainable, obviously impossible things like stats being altered outside of their limits, or items, skills, etc that don't exist in the vanilla game. If all you're doing is launching the game without anti-cheat, your save is the same regardless; there's nothing to flag.
I repeat: there is nothing to flag. You will not be banned, soft-banned, or any such similar language. You are effectively just playing offline since the game won't let you connect to the servers without it active.
