Step-by-Step Guide
I've played a fair bit of the game and it's great fun, but I keep missing things, or advancing one storyline which messes up others (e.g. Getting burned by the 3 Fingers before killing the Fire Giant).

Is there a guide anywhere that tells me what steps to take to *not* miss anything?

You cannot get everything. There are multiple endings and on one playthrough you can achieve only one ending. Some quests force you to make a choice and up to your choice you will get different rewards and need another playthrough to get the other ones.

There are no way to "not miss anything" because some things are mutually exclusive...

Other than that most missable things are connected with NPC stories, so you can open, for example, Fextra and go over all the NPC quest-lines.

Apart from that make sure to swipe the Capital clean before defeating the boss in Azula,

Allow me to correct my phrasing for those who are as foreign to the concept of 'philosophic charity' as a fish is to astrophysics:

Is there a guide anywhere that tells me what steps to take to *not* miss anything, except things which are mutually exclusive with each other?

Some people, such as myself and OP, find enjoyment in hunting EVERYTHING that we can and doing as many quests as possible.

Oh yea, that's /totally/ what I'm looking for: a dissertation on the game.

Why is this so complicated to understand: I want a short, to-the-point, like, bullet list of order of quest triggers so I don't over-advance one that locks me out of others.

Use the elden ring wiki. You can look up each NPC and questline and it tells you when to stop or what step progress it to the next step. Also gives you map links if can't find someone. The quest are in bullet points and really easy to go through

i used fighting cowboy on youtube for my recent pc run. He gets you all the achievements if you want them and side quests.

I agree with you, I don't really care for From's esoteric quest design. Particularly for an open world game, it should not be possible to "mess up" a quest by going to the wrong place. All that does is discourage you from exploring.

Here's a short list of some of the triggers I'm aware of.

Getting the invitation from Melina to Roundtable Hold.
Trigger: Fighting Margit, or activating a site of grace outside Limgrave or Weeping Peninsula.
Missable Quests:
- Iron Fist Alexander, Saintsbridge
- D, Hunter of the Dead, Summonwater Village
- Renna, Church of Elleh

Entering Liurnia.
Trigger: Might be activating any Liurnia site of grace, or just physically entering the space.
Missable Quests:
- Irena, Edgar, Bridge of Sacrifice and Castle Morne
- Roderika, Stormhill Shack

Radahn Festival.
Trigger: Activate an Altus Plateau site of grace, or advance Ranni's questline to the point Blaidd tells you to go to the festival.
Missable Quests:
- Blaidd, Mistwood Ruins and Forlorn Hound Evergaol
- Iji, Ranni, Road to the Manor and Three Sisters

The Treasure of Nokron.
Trigger: Give the Fingerslayer Blade to Ranni.
Missable Quests:
- Seluvis, Three Sisters

Joining Volcano Manor.
Trigger: Join Volcano Manor.
Missable Quests:
- Rya, Big Black Boggart, Liurnia
- Patches, Murkwater Cave, Liurnia, Mt. Gelmir

Slaying the Lord of Blasphemy.
Trigger: Kill Rykard.
Missable Quests:
- All remaining Volcano Manor assassination quests

Entering Leyndell.
Trigger: Enter Leyndell, aside from using the Tower of Return teleportation trap.
Missable Quests:
- Corhyn, Goldmask, Altus Plateau

Entering the Forbidden Lands.
Trigger: Enter the Forbidden Lands.
Missable Quests:
- Yura, Limgrave, Liurnia, and Altus Plateau

Arson.
Trigger: Commit the cardinal sin.
Missable Quests:
- Most quests

I'm used to old games where you could accidentally sell or use an item that would lock you out of progression. There were games you could level your character wrong and brick yourself. You could progress the game past the point of no return and be too weak to beat it. RPG's where choices mattered.
Most quests in modern games feel meaningless, I don't need to pay attention or think about anything because I can just run around end game and finish everything or look at my chore list

Thank god we still have souls games
