Lots of Ashes of Wars you can try. Lots of back and forth with bosses. A lot of enemies you can still stagger after 3 jumping attacks, you get a decent amount of poise just doing R1. You have a great thrusting attacking.
I love the Claymore
Beastman's Cleavers tend to be really underrated, those are good with strength and I actually like giving them Blood infusions and dual-wielding. Also they look awesome.
Marika's Hammer is a bit underrated honestly, that's another good Str/Fth pick.
The Ringed Finger, while mostly known as a meme weapon, is actually pretty fun to play with.
St. Trina's Torch can be an interesting offhand for PvP. The skill is really good for catching people off guard.
The Grave Scythe is also underrated. It's just a solid choice all around, a little bit of a pain to grind for though. It also gives you a little bonus resistance to death blight.
It's honestly just a skill stick, but the Grafted Dragon is fantastic for killing Erdtree Guardians, Ulcerated Tree Spirits, and pretty much anything else big and weak to fire. That one's probably best as an offhand weapon too.
Another problem is, the game doesn't have some crazy combo system where you can express some sort of freedom in how you use weapons in general. You lock yourself into a certain playstyle and repeat the same types of attacking over and over.
