Elden Ring if you're a beginner because of the sheer amount and variety of cheese.
sekiro has a much higher difficulty curve and it's not really a souls game, it's a tenchu game
You can make Elden Ring as easy or hard as you like. And you can take your ball and go home when getting your ass handed to you. You just go do something else.
Elden Ring generally has a lot more room for error, with way more options for how to approach things and ease the difficulty.
I think Sekiro is a superior and more rewarding game, but you have to know what you're in for.
The only comparable things between these two are amazing visual style, characters and stories.
