There are a lot of bosses and enemies that are overtuned and/or unfair tbh. People just tend to have enough damage and/or health when they encounter them so they don't think about it much. Dark Souls 2 is far more fair, but it gets a ton more hate because it doesn't have the "Miyazaki Magic" that souls fanboys adore.
Look I actually like DS2 a lot, but come on, DS2 is the most unfair and "designed purely to annoy the player" game out of all of them. Some of those runbacks are just absolutely absurd. There were several areas I just killed mobs and reloaded 15x or whatever just to end the torture of getting to the boss. Then when you get to the boss, he stabs 5 feet to your left and you teleport onto his blade

Death Rite Birds are also straight up bulls*it.
The Ulcerated Tree Spirits are just terrible in every conceivable way. Can't see sh*t half the time, can't tell if its attacking or just moving around, clips all over the place, camera sh*ts itself everytime they do the grab attack or anything similar, their placement in the late-game borders on trolling and there's like 20 millions of them.
Ancient dragons are atrocious. You're constantly under them, locking on isn't even an option and it feels more like guesswork than actually fighting.
Tibia Mariners are terrible because they pose no threat whatsoever, it feels like beating on defenseless old people that just want to ride their boat.
The one-handed beastmen in Farum Azula that just jump around and spin attack 87 times in 3 seconds in every direction while being able to kill a 60 vigor character in 3 hits.
Radahn as a melee character feels like the camera is giving him a spinning colonoscopy while you try to figure out wtf he's doing and just keeps running away as you're about to hit him, he also randomly goes on riding sprees ending up behind dunes and making you lose lock-on. He's hard for all the wrong reasons.
Runebears grew on me, but I still feel like their HP bar is bloated as all hell for what little runes they give.
You're actually defending grab attacks?
There are a few zones in DS2 that are gank city and I agree that's terrible design, but the majority are on par with other souls games. And most of the bosses have easy to dodge attack patterns.
Elden Ring bosses (and some enemies) have unlimited stamina, super fast and/or delayed attack patterns, and difficult to dodge AoE attacks. That's why everyone levels up vigor to 40-60.
If they actually had something worth fighting over, like some rare drops or a good stash of runes, I wouldn't mind them too much. But no. They drop absolutely zilch. I think that wandering around killing sheep is a more efficient grinding method. Lobsters suck.
I've played over 200 hours and I haven't killed a single lobster. I don't think some enemies are intended to be fought. I don't necessarily agree with that design philosophy (with some exceptions), but that's my guess as to the developers' intent.
For some reason the ulcerated tree spirit moveset just clicked, there's a rhythm to their moves. Unlike the revenant toddler slappy fit.
Ever since I found out lobsters are sleepy bois they're much less of a problem.
