So what you're fighting are people who overspecced to beat super high HP enemies with high damage moves.
And once they become Great Jar knights, they get that same massive HP buff and still keep their broken builds.
This means the next person to beat them has to have an even MORE broken build, and the cycle continues.
My advice is to just go offline and fight the generic base NPC knights. They're still tough, but not broken beyond believe.
If that's still too much of a pain, look up a video on how to trick them into falling off the cliff.
They have exploitable patterns of actions, they all have the same AI and do the same things. Do not engage them. You can just play completely passive and focus on avoiding weapon arts and spells.
The moment they start to run directly at you they will try to do a running attack and won't input-dodge your attacks. Simply attack twice if you have a fast weapon or once with a slow wapon whenever you see them do it, then roll back, be defensive and wait for them to do it again, rinse and repeat. They have no answer for it.
