#2 its really easy to bounce aggro between players, the bosses usually go after whoever hit them last, if you are good at doing this then its pretty easy to steamroll
#3 Drops from enemies are random, but set items everyone gets to collect
I will then feel bad for asking them to buy the game and play with me.
As for boss scaling they do in fact scale a bit more HP wise the more players you have.
Being able to ride around on Torrent and actually go about quests and exploration together is the main benefit to it.
When we played each player would get their own runes and loot. Idk If something is changed.
Just like it handles the spirit ashes. Sometimes it's fine, sometimes it's wack, sometimes you expect it to be wack and it outsmarts you by changing targets right away and coming right to your unassuming face.
I'd say serviceable. IMO the real problem is poise. Depending on your mates' playstyle you may need to assess your group poise dmg to evade stunlocking. For us (2 ppl), it wasn't a problem until late game, but the timing will be different for a big group.
2. Ai struggles with multiple targets badly. Even in vanilla if you summon any spirit ash you automatically beat the boss because it's just free hits.

or you know, do something about it yourself, like not using spirit ashes or going for weapons and builds you usually avoid in single player

You can all use Torrent. You can be in different places at once.
Yes fights will be easier, but difficulty is not the gold standard in having a good time.
Throw in a synchronized randomizer and enjoy finding brand new ♥♥♥♥ together, visiting places you wouldn't have thought to visit because anything can be in there now.
Trust me, me and a couple of friends played that ♥♥♥♥ for over a couple of weeks easy because we were having such a good time with the silly moments, finding items/weapons, and learning weird tricks from each other.
I would highly suggest taking it easy on enemy randomization as that can create literally unbeatable areas if you have bad luck.
As for enemies, they'll switch targets as normal. Just like with summons/regular co-op. If someone wants to heavy shield it they can grab that Shabriri Woe talisman and be the tank.
Loot? Guaranteed drops everyone gets. I believe loot tables are rolled for other things that aren't guaranteed however. And you all get a roll in that.
A developer's intentional design choices aren't "shoddy" just because they dont match what you and your minority of seamless players want.
If your friends are new players who want a challenge but don't want to deal with invaders, or just wouldn't like the way co-op in Elden Ring basically restricts you to tiny strips of open world at a time with little ability to explore togheter, you can stop things from becoming too easy by restricting your own builds and not giving your friends too much aid in making their builds or choosing their strategies.
No bigger handicap exists in this game than not knowing what you're doing, with the second biggest being whatever you're willing to impose on yourself when you know what you're doing.
Anyone telling you "it's not enough" is probably a salty invader missing the forest for the trees and thinking they're losing a whole lot of PvP interaction from people who would probably have refunded the game and never been a possible invasion target again after one or two times getting slaughtered in the most boring and effortless fashion.
Is there a way to enable invasions in seamless?
The game is definetly easier with more players, but enemies get a lot more hp, more than they normally do in coop in the vanilla game, specially bosses. If your friends are new to the game and you are not killing everything for them I don't think you guys will steamroll the game.
