new to modding, please forgive dumb question

I wanted to give modding a go and since I've never done it for any of the souls games, I just wanted to make sure I get this right:

I've downloaded the "Item and Enemy Randomizer" as well as "Elden Ring Reforged". Both installed and worked fine using either Mod Engine 2 or the "automatic mod engine" option from the randomizer. As far as I can tell, the Mod Engine uses the external folders to inject whatever is needed into the game exe, meaning whenever I just launch the game via steam, it should launch 100% vanilla. Is this correct? I just worry about accidentally booting up the game with some random file having been altered without me knowing...

(I'm aware of save files storing modded values and items and have made "clean" backups)

Yes, launching through steam boots up vanilla and you wont get banned. Just make sure not to play on your randomizer files.
