Why they put it right next to regular Caelid, i don't know.
You can always come back when you have a maxed character. Or you can try to learn his patterns until you can roll-fu through his attacks with 100% success rate. It's not impossible to do.
Another good option is parry.

Btw, buy arrows, use the donkey to jump up on the shack roof, and cheese him.

Like i said you can roll-fu him with 100% success rate if you practice enough but the fight lasted a long longer than the above when i tried that.
Parry is an underrated tool in this game. Whenever a boss does a combo that feels unreasonably difficult to roll through it is likely because FromSoft intended you to do something else, and usually attacks with a long wind up are a big give away you are supposed to parry them.
Bonking works well with him too but you still need to learn how to roll through his combos if you go that route.
