Undead are amazing because they come back at full hp, which basically makes them infinite aggro holders.
Another of my favorites is the Jellyfish, imo best summon against most Tree Spirits, some dragons, and especially against Wormface.
Honorable mention: Fanged Imps until mid game, they are also immune to some status effects.
Black Knife Tiche is pretty much a one-man-army, not just tanky, but the Destined Death effect chips through everything. Plus Tiche can dodge attacks just like any Black Knife Assassin. I have seen her solo Mohg, Lord of Blood with only minor healing assistance.
Only issue is beating Alecto at a low level. Something that can be difficult even with a high level character.
The Farum Azula Beastman ashes are underrated and quite powerful when upgraded.
Nothing that can compare to the Mimic ashes or Tiche, but certainly nothing to scoff at. Just do not bring them into a fight against Godfrey, they will just get poisebroken with every hit.
The catch? They are rather late-game, unless you know some special cheeky tricks.
Banished Knight Oleg does a ton of damage, but can be a bit too aggressive at times and die when you need him the most.
Honourable mentions to: The Kindred of Rot ashes, they dodge quite a bit and their Pest Thread-Combos can deal quite the damage to large enemies, but they are quite large themselves and get hit alot, especially by bosses with their large hurtboxes.
And: The Mausoleum Soldier ashes. They teleport a ton and harass bosses, pulling aggro quite well, and since there are 5 of them, they can burst some damage too. They do tend to fall rather quickly though if they cannot teleport-dodge in time.
ps There's also a nice little sort of mini quest encounter for the jellyfish later in the game. Id hadn't used him for a long time but made me feel all warm and fuzzy to pull him back out and sort him out.
But you can use every Spirit Ashes without FP requirement. You only need to get the Cerulean Hidden Tear and use this in your Physick Flask right before summoning your spirit of choice. It eliminates all FP consumption for a short time.
