You can tell which one it is by the red number next to the stat in the weapons menu.
If you don't have the required stats the weapon will do much less damage and cost much more stamina to use.
Something else that will make the game easier is leveling up your Vigor. At least 40, and ideally 60.
Also try to get your poise up to 51, as most PvE enemies do 50 poise damage on a hit (poise is what keeps you from getting staggered when hit). The Knight set you can buy at the Roundtable has exactly 51 poise, so that's a good option.
Ah, you should also make sure you have enough Endurance that you aren't fat rolling. Light rolls are only attainable with lighter weapons and armor or very high END, but you should at least maintain a mid roll.
