Try either of these things:
- Block with a shield, watch the enemy's attack bounce off harmlessly, then press R2 for a guard counter (or just do a regular attack if you don't have time for something fancy)
- Before the enemy attacks, run towards them, then jump and press R2 for a heavy jumping attack. Staggers basically everything that's not armored. (Light jump attacks also exist but are mostly useful against airborne targets, heavy jump attacks are just better most of the time)
- Buy the Endure ash-of-war from Bernahl. The defensive stance both makes you take halved damage and be almost impossible to stun by enemy attacks, use this before the enemy attacks and you can punish them with a fully charged heavy attack.
You need to make sure your character is at medium weight so you can roll fast enough to dodge attacks. Heavy weight will make you fat roll. You should also get your poise to 51 by equipping armor that has enough poise to reach that total. Attacks are deliberate in this game so if you start button mashing and panicking, you will have a bad time. try attacking only once and sometimes 2-3 times depending on the enemy or boss. You will get the hang of it eventually. Some enemies have delayed attacks or wind up animations. Try to have patience and wait for the attack to come before you try to dodge.
