There are 4 trolls near the warmaster shack in Stormhill. Are you able to kill them fast enough? 1k runes each one and thats all i can recomend you without spoilers.

theres also always cheat engines, and of course, just killing mini-bosses like a good law-abiding person would do lol
180... just play the game and you dont need any farm. you will have a much higehr lvl than is needed by any measurement
and even if you only do 50-75% of the games possible stuff you will reach 120+ which is still more than enough to beat anything in the game
instead of thinking that farming lvls will get you anywhere the time invested is much better spend by thinking about what the game offers you in tools and try to leanr and understand them fully. there is more to the game than ligth attack and dodge roll spam
Otherwise, Mohgwyn is still a decent place to farm runes in NG without the sword. Do Varre's questline to get early access to Mohgwyn Palace. Leave the palace and "backtrack" to the start of the area, where a site of grace overlooks a cliff, with a bunch of albinaurics leading up to the grace. This is the same spot as the above method, but instead you're going to use a bow or magic to shoot the bird you can see across the chasm. It will aggro and run off the edge.
That still requires at least beating Godrick, though. Which isn't hard, but if you want to grind some early levels before tackling Stormveil, then there's also the dragon in Caelid. Greyoll can be killed over and over again so long as you run back to the site of grace and rest before her death animation finishes. Anything that does % based damage works well here: black flame, poison, bleed, frostbite, etc. You can easily grab a bleed weapon and infuse it with the Poison Mist ash, found in the swamp. Use bleed to get her HP low, then finish her off with poison while you stand by the grace.
There are some other decent places to farm runes. Some people like to kill the vulgar militia around the Bestial Sanctum, and I've done the tree guardians leading up to the Dragonbarrow minor Erdtree. Dragonbarrow is an end-game area, so the enemies are tough but the runes are plentiful if you can manage.
For the most part, I'd say that rune farms aren't really necessary, just spend that same time running mini-dungeons instead. They are handy if you want to use a weapon or spell with high stat requirements, or you pick up an armor set and need more END to raise your equip load.
