is there a button to instantly open the inventory instead of having to press ESC then select inventory?

no, but the inventory inputs will queue, so you can just mash "esc>E>E" as fast as you can and you will always end up in your right hand equipment menu slot 1. the key is not to think of it in terms of individual inputs, but more like a combo in a fighting game - "esc>E>E" opens right hand slot 1.

i set my middle mouse button to "esc" when playing ds3 or ER, so instead of having to reach up and press esc, i can press my middle mouse button while retaining full control over WASD, and then i tap E twice.

I ended up using PowerToys. It's an official Microsoft app that can be downloaded from the Micosoft Store for free. However the key rebinds are changed across all programs including the desktop. If there is a way to make the keybinds exclusive to a certain game or program, I haven't found it, but it doesn't bother me since I never used the TAB key anyway.
