Yeah his combos are roll traps. He doesn't have a lot of health compared to other late game bosses so chip away at him.
First phase is really aggressive but he gives chances to bonk him after his little tantrums. If you hug his sides you can dodge a lot of his attacks and get bonus damage if you're using pierce weapon while he's attacking. All his attacks deal 100% physical so worst case scenario you can block.
If you're using summons Tiche does well because she will actually dodge his attacks and debuff his health. Her dodge is a lot more reliable and frequent than Lhutel's dodge.
For an INT build he won't dodge night sorcery. Delayed spells like Rock Sling and Glintblade will also trick his AI into dodging early. Dark Moon Greatsword is very effective.
For a Faith build the Blasphemous Blade is very effective.
Second phase do NOT block unless you really need to as he will debuff your health and cause damage over time. His second phase melee is like a blender but he starts at reduced health so wait to bonk him unless you are using Night spells, Dark Moon Greatsword, or Blasphemous Blade.
There's also an item that can "parry" his attacks when his sword glows but I'm so bad at it that I don't use it. It gives a few seconds of opening that lets you get a free crit. It's more effective for high crit weapons like rapiers or STR and/or status weapons with Wild Strikes. High damage weapons like Giant Crusher can get off a nasty hit at this time as well.
In first phase you can use weapon with Chilling Mist and/or Rot.
use it when his blade glows, wait for him to get close and deliver the holy parry upon him.
