If you've beaten Godrick then you can do Varre's questline to get early access to Mohgwyn Palace. I usually shoot the bird and get it to run off the cliff, seems like it's faster and more efficient than killing the albinaurics. You need the Sacred Relic Sword to make farming the albinaurics efficient, and you have to beat the game to get that.
@Mimic, yes, if you rest at the grace while Greyoll is in her death animation, you'll get the runes but she'll come back to life. This allows you to kill her over and over again for easy runes. Since she has so much HP, you really need something that does damage based on a percentage. Bleed, poison, scarlet rot, frostbite, black flame, and so on. There's several different bleed weapons you can obtain early on (such as the Flail or Morning Star), and there's a poison ash of war in the Swamp of Aeonia.
You can start farming runes within minutes of starting a new game, and there's zero risk of dying. I usually kill Greyoll a few times before tackling Stormveil, and once I've beaten Godrick I'll move my rune farming to Mohgwyn Palace.
