In case you like melee I recommend going strength / faith. For sorcerer chose astrologer.
Imo going melee is easier for a first playthrough. Because to find the necessary spells and gears for a sorcerer you'll need to google it / watch guides. But as a melee you can start right away, pick up some weapons and figure out on your own what you like.
Easy mode is to summon spirit ashes. Maybe you want search for some informations how to get powerful spirit ashes and how to upgrade them. It depends on your playstyle which spirit ashes are the best for you. When playing a sorcerer you need a tanky spirit ashes, like Dung Eater. Tiche is good for everyone.
Also overlevel / outgear content by looking at a guide how to get weapon upgrades without fighting.
For example you can get to +5 Somber Weapon material without having to do a single fight

sorcerer is easy mode in bossfights but can be pretty "difficult" in normal level progression

i mean... i don't really see how you ''die fast''
this game doesn't work like the usual games where mages are squishy. You can still get 50 vigor and be a mage. You can also use melee weapons
The only thing is that you'll probably not invest into heavy armor but light roll and powerful ranged attacks arguably give you way more safety than that in normal level progression
If you want to be primarily a spell caster then you have to invest levels into an extra stat. Unless you start the game by going to get a ton of runes from Dragonbarrow bosses or something then neglecting Vigor to some extent is necessary. Otherwise you end up being a melee fighter because you either can't cast a lot of spells or your spells don't do much damage.
Class only dictates your stating stats and equipment. It doesn't have any significance past that.
For an easy mode use Spirit summons at all boss fights to keep the boss away from you and spam dragon breath incantations from afar.
Invest your levels to Vigor(to stay alive), Mind(to get FP for casting spells), and either Faith or Faith + Arcane to power up your dragon spells.
Pick Faith + Arcane if you pick up the Dragon Communion Seal from the locked dungeon near the beginning and want to make it as powerful as possible. Increase neither stat past 45 in this case.
Pick Faith if you want to do better damage with melee weapons(fire infusion mainly). Use some other sacred seal than the dragon communion one for casting incantations but still keep it in your other hand for damage bonus.
Invest to Vigor until you have 40. Invest enough points to Mind so that your healing flask can completely fill an empty FP bar(depends of flask upgrades). Faith/Arcane for damage. Only put enough points to other stats to meet weapon wielding requirements. "Prophet" is the best starting class for this.

You need to beat Radahn to gain access to the area where you get the mimic tear.

You trade some endurance points for mind, that has no effect on your hp either way. The vigor is still the same as the other classes.
The only thing I can think of is that you trade some hp pots for mana pots. But that's pretty irrelevant when you can murder most enemies from afar so they can't even hit you. Melee builds would get hit more often so it's the same thing

I only beat Godfrey in Stormviel and Moon Queen in Academy so far
If you play a mage that uses mostly spells which is the only good reason to play a mage
you are on average squisiher than a melee counterpart.
This is no problem in bossfights since you can attack from range and therefore you take way less damage which easily outperforms the better defense of melee by a lot.
For normal area progression though a melee with 100% phys Shield and 1 hand weapon mainly using guard counters is a lot more safe and easier.
Ofc as Mage you can also invest mainly in Vigor and Strength.. but then your damage and cast speed will be terrible.
Its simply that you need to invest into dex (cast speed%) , intelligence(spell damage) and mind (mana) and therefore dont have much points for vigor
Not saying mage is overall harder.
Mage is overall easier
since bossfights especially with summons are so easy as mage that its ridiculous.
Still in my 2 mage playthoughs i overall died more between bossfights than in my 6 melee playthroughs were i basically never die outside of bossfights
You don't have to give up vigor at all. At best you'll give up like 10 vigor in the first few hours of the game and that's it.
You don't have to go full on dex mind and int right away unless you just want to. Spells are still perfectly fine in early without minmaxing those immediately.
You died in your mage playthroughs because you chose to be squishier not because you had to. I didn't.
Also you can literally have the best of both worlds if you choose to. No one says you can't use shields and melee weapons on sorcerers as well and save your spells for the harder enemies.
Good job. Now go beat the pants off Radahn and get your nerfed mimic tear. You have earned it.
